Eating Green Foods for a Day // Vegan Recipes // Healthy and Delicious
Three delicious vegan GREEN recipes I ate in celebration of the coming of Spring! I ate Green foods all day and it was amazing! Breakfast, Lunch, Dinner, and a Matcha Latte too!

The recipe for Palak Paneer will be on my blog soon but for now here is the recipe (adapted from the Song of India cookbook):

Ingredients:

1 Block Tofu
1-2 tsps tamari or soy sauce
½ tsp garam masala

½ pound fresh spinach

1 cup chopped onion
1 Tbsp. chopped ginger
1 can or 1 cup diced tomatoes
1 can diced green chilis
1 tsp chili powder
1 ½ tsps salt
2 tsps coriander powder
½ tsp turmeric powder
½ tsp ground cumin

2-3 Tbsps oil
½ tsp cumin seeds
Pinch of asafoedita
½ tsp garam masala

Press a block of tofu to remove excess moisture and cut into small cubes.
Place the cubes in a bowl and sprinkle with tamari or soy sauce and some garam masala.
Air fry for 10 minutes (or bake for 15-20 minutes) at 400 F degrees.

Fill a food processor with spinach and a little water. Grind to a paste and set aside.
In the same food processor, add the onion, ginger, spices, diced tomatoes, and green chilis.
Grind to a sauce.

Add the oil to a hot pan and add the cumin seeds and asafoedita. Fry for about a minute and then add the sauce. Stir and cook on medium heat for about 8-10 minutes. Add the spinach paste, stir well and cook for another 8 minutes. Add the tofu and garam masala, stir well and then it’s ready!

Serve with rice or naan.
