Orange Guacamole with Blue Corn Tortilla Chips

avocado, orange, guacamole, dip, appetizer, vegan, healthy, delicious, vegetarian, tortilla chipsavocado, orange, guacamole, dip, appetizer, vegan, healthy, delicious, vegetarian, tortilla chips

Ingredients

Serves 8

4 medium avocados, ripe

2 tablespoons fresh orange juice

1 large orange

1/4 cup finely chopped white onion

1/2 jalapeño pepper, finely chopped

2 garlic cloves, minced

Sea salt (optional)

Pinch freshly ground black pepper

Instructions

Slice each avocado in half, remove pit, and scoop out flesh with a spoon into a medium bowl.

Mash avocado flesh with a fork until smooth.

Mix in orange juice.

Use a small grater or zester to zest the orange; add to the avocado.

Peel the orange with a knife and remove visible pith (white tissue surrounding orange). Slice the orange into small chunks and add to the avocado.

Add white onion, jalapeño, and garlic to avocado, stirring well.

Season with sea salt (as desired) and freshly ground black pepper.

Serve with blue corn tortilla chips.

Makes about 2 cups of guacamole (1/4 cup guacamole with 1 ounce chips per serving)

Oranges and Avocados

Avocados and citrus tend to grow together in the same regions.

In fact, in many parts of California—Ojai, Santa Barbara, San Diego—you will find orchards of both fruits grown right next to each other. So, this tangy-sweet guacamole pays homage to the perfect pairing of these two ingredients—which pretty much screams the California-Latin lifestyle. Just take a classic guacamole and add fresh orange sections to the mix. Get ready to impress!
