3 TASTY VEGAN SANDWICHES ~ Must-Try Easy VEGAN Recipes!
3 Tasty Vegan Sandwiches ~ These totally awesome and tasty sandwiches are some of my family’s favorites! I go retro with a couple of recipes from my childhood, as well as my take on a classic toasted sandwich!

~ Super Supper Sandwich ~
(I learned how to make this one when I was just a wee lass!)
Baked Beans
Tempeh “Fakin’ Bacon” or other bacon substitute
Sourdough or any type of good bread
Daiya Cheddar Style Slices or other vegan cheese
Heat the beans in a saucepan or microwave. While they are heating, fry some Fakin’Bacon up in a pan. Toast some bread. This is an open-faced sandwich, so you decide how many you want!
When the bread has toasted, take it out, put it on a small baking sheet, and add the beans, cooked Fakin’ Bacon, and the vegan cheese. Put it back in the toaster oven, oven, or air fryer and broil for about 5 minutes. Was that easy or what?!

~ Chinese Chicken Salad Sandwich ~
(This one was inspired by a Chinese Chicken Salad we used to get at a Hunan restaurant when I was young.)
Whole grain or gluten free bread
Tofurkey Chicken Substitute or other faux chicken chunks
2 Tbsp. Peanut Butter or other nut or seed butter (almond butter or tahini perhaps)
2 Tbsp.Tamari
2 Tbsp. Rice Vinegar or lime juice
½ Tbsp. of ginger paste or grated ginger
1 clove of garlic, finely minced, or 1 tsp. garlic granules
1 Tbsp. brown sugar or other sweetener
1-2 Tbsp. chili-garlic sauce
Water to thin
Chopped radishes, celery, and grated carrot
Bean sprouts, cucumber, lettuce, cilantro (optional)
Combine all the ingredients except for faux chicken and the veggies to make the sauce. Add enough water so that it is a creamy, slightly liquidy consistency. In a bowl, combine the faux chicken chunks and the chopped veggies with the sauce. Toast some bread and spread the mixture onto it. Add garnishes such as lettuce, cucumber, sprouts, or maybe some pickled veggies. Enjoy!

~ The Best Veggie Reuben ~
Sourdough or Sourdough Rye bread
Vegan butter
Stoneground or Dijon mustard
Nutritional Yeast
Tofurkey brand Peppered Deli Slices (or original Tofurkey flavor)
Sauerkraut
Daiya Swiss Style Slices or other vegan cheese (Provolone or Gouda are also good)
Butter two slices of bread and spread some mustard on the inside of one. Sprinkle with nutritional yeast. Set aside. On a hot skillet, quickly heat 4 or more of the peppered deli slices (for each sandwich – I find that one package makes 3-4 sandwiches). Once they are warm, transfer to a plate and set aside.
In the same pan, place the bread, butter side down. Add the deli slices and the vegan cheese. Cook until browned on each side and the cheese is melty. Remove from pan.
In the same pan, heat a generous amount of sauerkraut. When it has heated and started to caramelize a bit, add it to the sandwich.
Beware! These are addicting!
