3/4 cup Lentil Walnut Taco Salad filling (page 112), divided
1 tomato, chopped
1 red bell pepper, thinly sliced
1/2 cup Guacamole (page 149)
1/2 cup Mango Salsa (page 148)
1/3 cup Cashew Sour Cream (page 113)
2 scallions, white and green parts, chopped
SAMPLE RECIPE: LENTIL WALNUT TACOS
Prep Time: 5 Minutes // Yield: 2 Servings
Tacos are a great option for the whole family. The Mango Salsa (page 148) adds a touch of sweetness and heat while the Cashew Sour Cream cools with a tangy creaminess.
